Roasted eggplant slices
Sundried tomatoes, chopped
Kalamata olives, sliced
Fresh oregano leaves
Olive oil for grilling
Instructions:
Crumble feta cheese on one slice of olive bread.
Layer roasted eggplant slices, sundried tomatoes, and Kalamata olives.
Sprinkle fresh oregano leaves for a herby touch.
Top with the second slice of bread.
Brush the outside of the sandwich with olive oil.
Grill until crispy and the cheese is slightly melted.
